Guacamole has been on my list from quite a long time, even though I imagined my self sitting in some Mexican restaurant when I have it the first time, if not eating it in Mexico trip itself 😜. But quarantine boredom and thrive to try something new made me to make it at home itself. Although after trying I feel like why didn’t I make it before. It was sooo good, infact to think of it, it was actually the first time I have had Avocado in my life. I went through youtube for some recipes for the same. I finally decided to follow Beyonce’s recipe from this BuzzFeedVideo youtube video : Which Celebrity Has The Best Guacamole Recipe?
Recipe is basically a mix of mashed Avocado, chopped onions, chopped tomatoes, lime juice and a pinch of salt. The guacamole was so so rich and creamy and lemon juice was like cherry on cake, they compliment each other so well. Onion gives the perfect crunch to the mix and tomato helps with its tangy flavor. Ooh I can’t wait to try this dish again already 😍.
So for nachos I actually went for cheese flavored Doritos as those were available to be currently. They were good, but definitely the star dish was Guacamole. Plus avocado has so many benefits, Potassium, Healthy fatty acids, fibrous great food to go with when on a diet to loose weight. Plus best part they are really tasty.
Now interestingly, as I don’t have much experience with Avocado, the next time I ordered it, it came raw. Then I went through a couple of videos on how to ripen an avocado. For that I tried 2 different tricks. One avocado I wrapped up in a newspaper and kept it on the shelf for 2 days straight. Other one I microwaved for a minute. The newspaper one got reddish from outside and was ripened in 2 days. But the microwave one even though it got softer from outside, it was still kind of raw from the inside. I hope this experiment helps, if some one else gets unripened avocado.
